I told you right at the beginning, that we will visit some old past glories. Lamingtons is an Australian dessert and are as old as the late 19th century. The story goes that a chef by mistake dropped a sponge cake piece in chocolate sauce on a side burner. Ha, who would have thought.My favourite, much underrated, these beauties are hardly available at any upscale bakery these days (yeah, not even in Australia)The procedure- beyond simple, the taste- beyond divine, and so what if they are not available outside, bake them in your kitchen!! Classic sponge cake, chocolate sauce and desiccated coconut are the 3 main ingredients. So here you go :-

CLASSIC VANILLA CAKE: ( You can use any of your favourite recipe of a sponge cake with or without eggs. Mine is below)

INGREDIENTS: Servings : 36 pieces

2 CUPS FLOUR

2TSP BAKING POWDER

3EGGS

1/2 CUP OIL

1.25 CUPS FINELY GRANULATED SUGAR

1 CUP WATER

1/4TH TSP SALT

1TSP VANILLA EXTRACT

STEPS

MIX ALL DRY INGREDIENTS AND SEIVE AND KEEP ASIDE

WHISK OIL & SUGAR

NOW ADD EGSS

NOW TOGETHER ADD WATER AND DRY INGREDIENTS

POUR IN A GREASED PAN APPX SIXE OF 9INCHES

BAKE FOR 35MINS AT 180

ALLOW IT TO COOL, COMPLETELY FOR ABOUT 2 HOURS, (ELSE ASSMEBLING WILL BE DIFFICULT)

CHOCOLATE SAUCE – 

Chocolate Dark OR Milk – 150 gms

3/4th cup sugar

3/4th cup cocoa

3/4th cup milk

1/2 cup water

1/2 tsp coffee + 1/2 tsp vanilla

STEPS:

Step 1 – Melt chocolate in a bowl

Step 2 – Add sifted sugar and cocoa into it.

Step 3 – Then add milk and water and all other things and mix well.

Step 4- Adjust the water and sugar level according to your taste. (It should be pretty runny)

Step 5 – Let it cool completely.

ASSEMBLY

Cut the cake into neat squares. Mine were appx. an inch and quarter and I got 36 neat pieces. Dip each with tongs in the sauce and immediately coat with desiccated coconut and keep on a tray. Cool in Fridge and enjoy for at least 5-6 days. ( TIP Of THE DAY: Since these are relatively simple to make, please be sure to cut neat squares as presentation is what makes them little cuties. Brush of crumbs from the sides if any )
