Lots of Fruits and Carbs, all cobbled up together, gives you a divine dish called Cobbler. Yup, thats right.

Whether its origin is US or UK, that hardly matters, as there are so many versions of this dish, one would naturally lose track over a period. Its actually all that you want from a pie, sans the efforts required to construct a pie….You understand what I mean? Right. So the hero in these dishes are the fruits you use, and it is the topping, which could be layers of crumbled biscuits or just APF and butter thrown in , or some oats and nuts etc that change the definition a wee bit for each dish and thats how you get either a cobbler, a crispie or a crumble. Peach Cobbler is very very famous in the U.S and hence Peach Cobbler does enjoy a special mention each time one talks about cobblers. However over period people have experimented with berries and other fruits. This one turned out pretty well for me. I won’t bore you more….Here’s the recipe 🙆

~ INGREDIENTS:

~ 1.5 Cups of Blueberries

~ 1 Cup Flour

~ 3/4 Cup Castor sugar

~ 1.5 Cups of Milk

~ 1 Egg

~ 3 tbsp Butter

~ 1tsp Cinnamon

~ 1tsp lemon juice

~ 1tsp baking powder

TO BE TOPPED WITH:

~ 3/4 cup Sugar (Reduce to half if you prefer less sugar)

~ 1 Cup boiling water

~ STEPS:

  1. In a pan lightly toast the berries, cinnamon and lemon juice. Once cooled, spread in an 8 inches pan and keep aside.

2. Now beat the egg and sugar till fluffy.

3. Add the Flour and baking powder

4. Finally stir in the milk , butter and vanilla.

5. Pour this mix over the berries

6. Now sprinkle the additional catsor sugar on top and the 1 cup hot water.

7. Bake for 30 minutes on 165 degrees C.

What are you waiting for? Please have it HOT HOT!! and ….. with that, what do you call, yes a scoop of vanilla
