These hot pockets, are single serve pastries. Can be sweet or savoury, fried or baked. Lunch , breakfast, picnic baskets or a simple dessert is what I would use them for. For me they are a quick fix and as delicious as apple pie or poor cousin apple crumble. I prefer these any day. Less on sweet these pies are delectable and you cant stop at one. Without much ado, lets get down to the steps.
INGREDIENTS FOR THE CRUST (DOUGH) : SERVINGS: 10
2.5 cups flour ( 1/2 cup almond flour + 1 cup coconut flour + 1/2 oats flour + 1/2cup APF
1/2 cup cream cheese
Pinch of salt
2 tbsp sugar
6/7th tbsp ice-cold water
1/2 cup butter
1 lemon juice
STEPS:
Step 1 – Whisk all and keep in the fridge for 1.5-2hrs. (This is an imp step, don’t be tempted to skip)
FILLING –
INGREDIENTS: 3 apples diced really small + Juice of 1 lemon + 4 tbsp sugar + 1 tsp cinnamon + 2 tbsp butter .
STEPS: Cook all together for about 10 -15 mins till tender. ( Donβt let them get too squishy!) I like the filling to be a little crunchy, if you like the consistency to be sauce like, please mash the apples while being cooked and cook them for another 15minutes)
Allow to cool to room temperature for about 2 hours.
ASSEMBLY AND BAKING ( My favourite part)
Roll out the chilled dough on a flat, clean surface. Use circular cutter to make even shapes .Now put the filling on 1 half of the dough and roll up the other half on top of it. Seal with egg wash or water. Double seal with fork. Lastly Brush with egg wash(or cold milk) . Bake them on both rods (top and bottom) at 170 for appx 15-20 minutes. These ones are quick to bake as the dough is not all APF.
Dust with confectioner’s sugar and have them piping hot. You can send me flying kisses if you want as that is what you will feel when you dig your teeth in these.πβ€οΈ
